Please tell us a little about yourself:
I'm a coffee trainer and consultant for coffee roasters in France since almost 2 years now. I also started a bean to bar chocolate factory. I've been competing since 2015 in the CIGS, 2 times champion, french cup tasting finalist and also awarded in 2023 ""best craftman of France"" (Meilleur Ouvrier de France) so I can wear a french flag collar on my jacket like famous kitchen chefs and sommeliers. I arrived in the coffee industry after studying in a catering school in France. This is where I first participate to a small coffee championship organized for students. I directly fell in love with the product.
What are you excited to do while you are in Houston?
BARBECUES ! How my god I can't wait to visit bbq places since I watched the chef table episode about Tootsie Tomanetz in Lexington TX.
What are your interests outside of coffee?
I have played bowling on a competition level since 12 years old, I bake bread, I mainly cook, ferment things and I really enjoy analog photography.
Is there anyone you’d like to thank?
My girlfriend for beeing such a strong support since the first championship I participate at in 2013. My coach and supporters Dajo and Damien who will be coming to Houston with me. And finally the France SCA Chapter for doing such a great job organizing the nationals.
