Please tell us a little about yourself:
I’m Kevin, co-founder, co-owner, and head roaster of Moklair Coffee Roasters in Reims, Champagne, France, where we run both a roastery and a coffee shop.
I spent my summers in my grandparents’ farm, where my love for terroir and nature began. Later, I followed my vocation in science and air traffic control. At the same time, I was just a guy chasing flavors, always curious why some things taste better than others. Finally, coffee tied it all together.
Tasting led to brewing, and finally to roasting, the real key. Once it clicked, everything made sense, and it shaped Moklair.
Since 2021, I’ve been competing, winning two French Barista Championships and reaching the 2022 WBC Semi-finals in Melbourne. A place where I can celebrate producers and the magical work of nature.
What are you excited to do while you are in Milan?
Probably not as much as I’d like, there’s always a lot to do. But of course, as much good (vegetarian) food, and (natural) wine as possible, shared with friends and family.
What are your interests outside of coffee?
Outside of coffee (and air traffic control), I like to slow down with long walks and hikes in nature with our dog, Saké. I enjoy the good things in life; cocktails, wine, and food shared with friends and family. I’m also passionate about art: I love to draw and paint, I get lost in museums, perfume stores, and I never miss a chance to dive into history talks with my grandma.
