CIC All Star: Dimitris Baigousis
Please tell us a little about yourself:
I’ve been part of the coffee industry for 18 years. I’ve worked with coffee companies as a training and quality control lead, focusing on consistency and high standards at every stage. From 2020 to 2022, I earned the CIC championship title in my Country , and in 2022 in Milan, I placed 3rd in the world.
My obsession with creating the best possible cup is what made me put my studies as a mechanical engineer in second place and fully commit to coffee.
What is a fun fact about you?
I’m a detail-driven person and everyone who works with me knows it. I constantly experiment with different, clean and balanced flavor profiles, because for me, progress comes only through testing, precision and consistency.
Why is CIC special to you?
The CIC stands out because it brings together tradition and the modern evolution of coffee. I come from a country where ibrik coffee is part of our cultural identity. Through the CIC, we can keep this tradition alive while evolving it without losing its character.
What are your interests outside of coffee?
I’m a down-to-earth person. I enjoy traveling, spending time in nature, and sharing simple moments over a good glass of wine with good company. And whenever I can, I go watch my favorite basketball team play.
