Please tell us a little about yourself:
I’m a social entrepreneur, a barista, and a coffee lover with over two decades in the industry—driven by one mission: to inspire people to chase their dreams and make a positive impact, so that together we can build a beautiful future. I lead Henry & Sons and founded The Giving Café—a social enterprise that transforms how people connect with coffee by supporting farming communities and revitalizing local agriculture. My journey has taken me from rejuvenating abandoned Liberica farms to transforming former mining communities into thriving coffee-growing regions. I believe every cup should carry a story—not just of flavor, but of resilience, kindness, and community. This year’s routine explores “Connection”—a theme that reflects not only the synergy between flavors but also the deep human bonds formed through coffee. From designing custom tools that elevate the coffee experience to using cutting-edge science and technology, I’m passionate about pushing boundaries to serve more than just coffee—I want to create a message that resonates with positivity around the world. Offstage, I’m committed to empowering coffee professionals through innovation, education, and mentorship. Because at the end of the day, it’s not about being on stage—it’s about inspiring a community to build a beautiful coffee future.
What are you excited to do while you are in Milan?
I’m excited to immerse myself in the culture of Milan—a city that blends history, design, and innovation in such a unique way. I can’t wait to explore its vibrant coffee scene, connect with local baristas, and draw inspiration from both traditional Italian espresso culture and modern interpretations. I’m also looking forward to sharing the story of Philippine coffee with a new audience, building meaningful connections, and finding unexpected sparks of creativity in the conversations, architecture, and flavors of the city.
What are your interests outside of coffee?
Outside of coffee, I’m passionate about entrepreneurship, fitness, agriculture, 3D printing, and creating innovative solutions—especially where those intersect to create positive change. I enjoy mentoring young creatives and entrepreneurs, helping them turn ideas into purpose-driven ventures. I’m also drawn to design, storytelling, and exploring how science and technology can enhance everyday experiences. And when I need to recharge, I spend time running, reading, traveling, or just being with family—those quiet moments often spark my best ideas.
Is there anyone you’d like to thank?
I’m deeply grateful to the incredible team at Conlins Coffee and Henry & Sons, to my family, and to my father, Henry Lim Conlin—who has always believed in me and taught me how to pull my first espresso when I was just 10 years old. To my brother, Eric, whose love and support have made this journey possible, and to my kids, Liam and Dylan—you are my greatest joy. A special thank you to Agnes Bautista, our general manager, who is the heart and soul of everything we do. She has been holding down the fort and leading both Henry & Sons and The Giving Café while I’ve been preparing for this competition. To my coaches, Federico Bolanos and Ricca—thank you for your hard work, trust, and unwavering support. Thank you for standing beside me every step of the way. I’m especially thankful to Wilton Benitez and his team at Granja Paraiso 92, as well as to the coffee farmers in the communities I work with.
