Please tell us a little about yourself:

I'm the co founder head barista and roaster of Apolo, a roaster and a little coffee bar in Mexico City. I've been compete for about twelve years since I was young and full of hope in my eyes (joke, or maybe not...)

What are you excited to do while you visit the WCC city?

I love walking across every place I go, take a lot of pictures and go to eat every food that crossed my sight

What are your interests outside of coffee?

I like taking street pictures, watching movies, walking around my neighborhood, visit cocktail bars and playing a lot with my dogs

Is there anyone you would like to thank or recognize, or who helped you to prepare for the WCC?

All the Apolo family!!!! Clients and friends inside and outside the bar. My coworkers in the bar, my family by blood and by choise, and last but not less, Pame, basically the other half of Apolo

What roaster do you currently roast on and how long have you been roasting coffee for?

A mexican brand called 100mex and we have an old custom made little roaster for experimenting

What is your favorite coffee brewing method and why?

The espresso. Is the most beautiful and complex coffee drink, and the ritual behind it's a kind of a safe space to me

Besides your own competition drink, do you have a favorite cocktail?

I like the floral and sweet ones like martinez or adonis, and the tiki cocktails, full of flavor and fruitiness
