Please tell us a little about yourself:
Im part of the international sales and QC team at Tanat Coffee, competing since 2018 6 times finalist at the brewers cup between Colombia and France, finally this year got the honour to represent France at the world stage. What mades want to compete is always the fact that I can share something new, whether is a new device, coffee variety or new technique. I have a very close bond with France, I got my first specialty coffee in Paris 13 years ago and thanks to this, my career in coffee started. During these 13 years I've been back and forth between France and Colombia. Now currently living in Hong Kong supporting Tanat internationally and embracing the beautiful coffee community in the Asian countries. My first job in coffee was being a writer for Perfect Daily Grind, owned a coffee shop and roastery in Colombia back in the days.
What are you excited to do while you visit Brussels?
Mostly getting to know the local roasteries and coffee shops, these spots always show you something interesting and not so common about the city's local vibe.
What are your interests outside of coffee?
Im getting started in to playing piano, baby level at the moment (will get my hands on after the worlds), love hiking and learning about nutrition.
Is there anyone you would like to thank or recognize, or who helped you to prepare for the WCC?
I have a solid team of men supporting me, first of all my husband's daily support, although he is not in coffee, he cares about every single detail of my competition, he keeps my emotions steady with his advice to take care of my self. Then my boss Alexis founder of Tanat Coffee, his incredible technical support, great humour and flexibility to make things work is amazing, our head roaster Thomas, always supporting my thoughts making sure I have a clear structure in mind before performing my strategy, his critical opinion is also a huge support to my work. And last but not least my international sales team Andrew and Hugues, making sure the logistics are on point, the best problem solvers and resourceful people! And the producers, always making sure we get the best coffee for the competition. Also a big thanks to my sponsors, Chris from Hiflux, Linus from Difluid, Johnny and Lucas from Icosa, Time More products, who never doubted to provide prototypes, new products and technical information that can support my presentation.
What roaster do you currently roast on and how long have you been roasting coffee for?
I used to roast back in the days when I was a coffee shop owner, I did it for about 7 years but now with Tanat, roasting is not part of my role, we roast on Loring and Stronghold.
What is your favorite coffee brewing method and why?
Im all about flat bottom drippers, the ones that deliver a consistent flow rate, and efficient extraction, so Orea, Solo, Origami and Dragon fly tri spin.
Besides your own competition drink, do you have a favorite cocktail?
Im not into cocktails that much, but when it comes to tasting I do enjoy the elegant, floral and balanced cocktails.
