Please tell us a little about yourself:
I have worked and lived abroad ever since graduating, first in Spain, then Portugal where I opened with some friends SO coffee roasters, and finally in Athens where I work at Cofinet, while also being a part of Foyer espresso bar, an innovative coffee shop we own with my partner and his brother. I have been competing for six years now, I love the research, the progress, the improvements and the amazing people and friends it made me create.
What are you excited to do while you visit Brussels?
I am excited about connecting with other competitors from all around the world while tasting the best coffees out there
What are your interests outside of coffee?
Reading canaries and plants: I spend all my free time either reading, taking care of my plants canaries.
Is there anyone you would like to thank or recognize, or who helped you to prepare for the WCC?
First and foremost, my partner - boyfriend - coach, Giorgos Papantoniou. He is the reason I never gave up, and he's the most talented and inspiring professional I know.
What roaster do you currently roast on and how long have you been roasting coffee for?
Roest and Kaffelogic, for about 2 years now
What is your favorite coffee brewing method and why?
Filter coffee of course, I love flat brewers but when I am at home I always use the Cafec deep 27, smaller ratios for more coffees!
Besides your own competition drink, do you have a favorite cocktail?
Does hot chocolate with whipped cream count?
